Rosemary
is a herb which would have been used in Shakespeare's
time for use not only in cooking but on the floor
to make the room smell fresh and between the sheets
to keep fleas at bay
Rosemary,
the herb of love and remembrance is steeped in thousands
of years of myth and tradition, known to have been
used for healing, magic as well as seasoning since
the beginning of recorded history.
Rosemary
has an intense flavour and should not be overused.
It works well with pork, lamb, chicken and shellfish
as well as potatoes and carrots. Meat can be basted
by dipping a rosemary branch on olive oil then brushing
onto the meat.
The
most unique of the Rosemary varieties are the golden
and silver variegated forms. Considered quite rare
this golden or gilded Rosemary is slowly making it's
way to more and more herb nurseries.
