Molten Centre chocolate puddings.

Ok, everybody is doing these but they are so delicious you just have to have a go.

If cooked in ramekins or cappuccino cups these can be served straight from the oven

 

 

115g Unsalted Butter
120g quality Dark Chocolate (Lindt Excellence or similar)
2 Eggs plus 2 yolks
55g Caster Sugar

2tsp Plain Flour

  1. Preheat oven to 230C/450F/Gas 8. Butter and flour the inside of four cappuccino cups or ovenproof ramekins.
  2. Sit a bowl on top of gently simmering water and warm butter and chocolate until chocolate just melted.
  3. Whisk eggs and sugar together in a separate bowl until thick and light in colour.
  4. Give the chocolate mix a good beating then pour it into the eggy mix, whisking all the time. Switch to a wooden spoon and mix in the flour.
  5. Pour into the moulds and bake for 6-7 mins.

                                                           

Serve on a plate with a small dish or ramekin of ice cream. Dust puddings with icing sugar.
